Oreo Cupcakes

Year 2012 has been a very busy year for me, juggling between work and kids really burned me out, as you can see from the number of bakes dropping..hahhah.... But then, I will still bake at least 3 cakes a year, for my dearie, for my prince and my princess. 


Today I tried my hand at something I had been meaning to do for a while, Oreo cupcakes.  School is re-opening soon in another week time, this will probably my last bake of year 2012.

It hadn't actually planned for it so I use sponge cake mix for the cake, they are super easy to make. 


What I need;

250g sponge cake mix
50g unsweetened cocoa powder
5 eggs
50g butter (melted)
50g water


How to do it;

- pre-heat oven at 180 degree.
- In a huge bowl, put sponge cake mix, cocoa powder, eggs and water together
- whisk at high speed for 10 mins, reduce to medium speed for 5 mins
- fold in the melted butter, mix well and put aside.
- place one oreo or crushed oreo at the bottom of the cupcake liner
- pour the cake batter into the cupcake liner till 80% full
- bake for 15 -20 mins until a skewer inserted into the centre of the cake comes out clean.
- remove the cupcakes from the oven tray and cool completely before frosting them.


What I need for frosting;

250g room temp unsalted butter
200g - 250g icing sugar, sifted (*  I use only 150g)
1 teaspoon of vanilla extract
crushed oreos (depending on individual preference)
whole oreos for deco.


How to do it;

- using a mixer, beat butter and gradually add in the icing sugar till it is fully incorporated.
- add vanilla extract and mix well before stir in the crushed oreos.
- pipe the frosting onto the cooled cupcake and top each with an oreos (can use chocokate too)


* I'm not a sweet tooth person so I have reduced the amount of icing sugar so the frosting may be a bit softer.  To make it easier to pipe, you can put the frosting into a pipping bag and place it in the fridge for 20 mins before using.


# store the cupcake in an airtight container in the fridge, can keep for 3-5 days.  Thaw for 5 mins in room temperature before serving. :)

Topo Map Love Cake


When I saw this cake on Wendy's blog, I was fascinated by the beautiful lines on her butter cake. I just had to try it out myself! Finally weekend is here and I can bake this beautiful cake.  The cake turn out well after baking with slight cracks on the top but it's a nice butter cake with firm crumbs.

Well, I am reposting the recipe here for easy reference in case I want to bake this again, you can check out Wendy's blog to drool over her beautiful cake.






Recipe adapted from Wendy from Table for 2 
Ingredient
  • 250gm butter
  • 250gm sugar (I used 180gm)
  • 5 medium eggs
  • 300gm cake flour
  • 1 tsp baking powder
  • 125ml evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp pandan paste
  • Cocoa powder for creating the topo lines 

Method
  1. Cream butter and sugar until pale and fluffy.
  2. Beat in eggs, one by one, beating well after each addition.
  3. Sift half the flour into the butter mixture and beat on low speed until well combined.
  4. Mix in the evaporated milk until well combined.
  5. Sift the balance of flour into the mixture and beat on low speed until combined.
  6. Divide the batter to two. Mix vanilla extract to one part and pandan paste to the other.
  7. Preheat oven to 180 deg cel and lined a 8" square pan.
  8. Spread 1/2 the pandan batter (or vanilla whichever you prefer) into pan. Level it.
  9. Evenly sift a thin layer of cocoa powder over.
  10. Very very gently dollop half of the other colour over and gently level it. Repeat the sifting of cocoa powder.
  11. Repeat layering with both colours, with the final layer clean (no cocoa powder on top).
  12. Bake for 45 minutes or until toothpick comes out clean.

My sweetie 9th Birthday Cake

I have been thinking hard on what to bake for my little sweetie birthday.  Went for a fondant cake course recently and my lil sweetie suggested that I put what I learnt to use. :D 


Start looking for some ideas online a week ago and scratch a draft on paper....but I finally understand that planning and reality is never the same...hahaha... had a hard time moulding  the ballerina and flowers, abit ugly but lucky thing my gal was impressed and happy w her bday cake.  phew!! 


PS: no more fondant for me for a long long while...

My first Pizza



Have always been telling my little girl that if you make a promise, you have to keep it.  *blushed* yet I broke one last week.  Supposed to make pizza for lunch last Sunday but I was not feeling very well, thus, feeling very tired and sleepy.  So end up, I just cook simple lunch and that make my girl very upset because she does not get to eat her fav pizza.

Feeling much better this week, I decided that I should keep my promise and make pizza for lunch today. 

I know that I do not have much time to spare in the morning to make the dough from scratch, so I use “betty crocker pizza crust mix|”.   This mix is easy to handle and make my making of the pizza crust a breeze.  It taste nice too.



I topped the pizza w black pepper chicken, ham, mushrooms, capsicums, sausages, eggs and lots of cheese!

My lil ones commented that this is the yummiest pizza they ever had, isn’t it sweet!!  (^.^)

2 tier fondant cake

This is my first fondant cake.  The recipe for the cake and fondant was quite simple...the hardest part was actually the decorating part.  Initially I thought it would be easy but once I started using the fondant, I realised it was not that simple.  I really envy those bakers who can make and decorate beautiful fondant cake. =)

Remember to knead fondant in a cold room as it will get too soft in normal room temperate and will start to get real sticky.

Strawberry Jellyhearts Cheesecake

After Im done with the triple layered cheesecake for my boy's Birthday celebration, I told myself that I must make this strawberry jellyhearts cheesecake for my wonderful colleagues in office for Valentine.  

A very popular non-bake cheese cake in Singapore, this recipe has been blogged over and over again by food bloggers in Singapore.  They are not difficult to make and all you need is a whisk and the fridge.

I used the digestive biscuit base and cream cheese filling from my triple layered cheesecake that I have made earlier.  This is the first attempt and Im really glad that it turn out well.

Triple Layer Cheesecake revisit

One year ago, I made a triple layer cheesecake for my boy birthday.  He loved it so much that he requested for the same cake for his birthday this year.... Oh Gosh!!..I didnt even realised that one year has passed...time really flies..he is 10 this year and Im getting older too :( 

Im glad that he still love eating cakes that I baked and giving me lots of suggestions on how I can improve.  :)
